Kann man bei Imbiss-Gerichten auf Fleisch verzichten? Wir haben den Test gemacht. 

Ich – bekennender Fleischesser – bekam den Auftrag, das vegane Restaurant “bevegend befried” auf dem Kiez zu testen. Auffallend war hier schon das Wortspiel . Befried befindet sich in der Friedrichstr. 3-5 auf St. Pauli und behauptet von sich, dass das “künstliche” Fleisch genauso schmeckt wie das “normale”. Ich war sehr gespannt, was wohl kommen würde und bestellte ein Jägerschnitzel und einen Black Bean Burger.

Das Ambiente des Restaurants ist gemütlich und – wie sollte es anders sein - natürlich und in grün gehalten. Sehr passend zum Thema. Die Gäste sind zwischen 20 und 40 Jahre alt, umweltbewusst und alternativ interessiert. Die Mitarbeiter sind sehr freundlich. Sehr schön ist, dass man während man auf die Bestellung wartet, die Zubereitung der Speisen sehen kann, da sich die Küche sichtbar im Restaurant befindet.

Dann kam das Essen - Jägerschnitzel.

Das etwas andere Jägerschnitzel mit Pommer und Salat.

Optisch sehr ähnlich zum “richtigen” Fleisch, knusprig und ansprechend zubereitet. Es war relativ saftig und faserig wie richtiges Fleisch. Geschmacklich war schon ein Unterschied zu merken. Zwar anders, aber gut. Mir hat es jedenfalls geschmeckt.

Von der Konsistenz her ist er eher trocken, trotzdem aber gut mit Fleisch vergleichbar. Geschmacklich gab es hier einen größeren Unterschied. Ich muss leider sagen, dass er nicht mein Fall war. Die Beilagen waren dafür sehr knackig und frisch zubereitet.

Befried ist günstig: 4,50 € für den Black Bean Burger mit Beilagen und 7,90 € für das Jägerschnitzel mit Pommes und Jägersoße inklusive Salat.

Nach dem Essen fragte ich den Besitzer, seit wann und warum er den Laden betreibe. Seit einem Jahr betreibe er den veganen Imbiss. Er selbst ist Veganer aus Überzeugung und kaufte schon immer nur “Bio”. Er kam dann auf die Idee, selbst ein Restaurant unter dem veganen Grundsatz zu gründen.

Zu den Inhaltsstoffen: Der Käse ist nicht vom Tier, sondern alternativ aus Pflanzenfett. Statt Ei in der Remoulade ist ein indisches, schwarzes Salz enthalten, welches einen schwefeligen Geschmack hat und den Eigengeschmack des Eis ersetzt. Inhaltsstoffe sind 1 Gluten, 2 Soja, 3 Konservierungsstoffe, 4 Zuckerkulör, 5 Geschmacksverstärker.

Mich hat die Idee von diesem Restaurant letztendlich überzeugt, geschmeckt hat es auch. Ich würde wieder in das Restaurant gehen.
